Quick, Cheap and Easy Spanish Rice Stew Recipe

This is a guaranteed cheap, quick, and easy recipe for a stew that will fill many bellies. You can buy all the ingredients for less than 10 dollars and it can feed a large family of 5 or 6. Another great thing about this recipe is that it is fully customizable. You can leave out, switch out, or add many things like more veggies or fresh ones. You can also try different kinds of sausages for different flavors. Finally you can substitute for healthier versions of the ingredients.

1 package of Spanish rice

1 can of corn

1 can of green beans

1 can of stewed or diced tomatoes

1 package of sausage – around 14 oz, preferably the pre-cooked single loop packages.

Optional: water – you could add extra water after rice is cooked to change thickness.

Using a larger stew style pot prepare the Spanish rice using the directions on the package. While waiting for it to cook, cut up your sausage to your liking, I recommend a ½ to full inch cubes. Also get all your cans open. When the rice is done add all the ingredients, stir it up, then heat to eat (preferably covered but not necessary). Again, after trying the recipe this way, it is worth trying to add additional ingredients or substituting for others.
